I adore Indian food. This recipe took me a while to master – but now it’s perfect. I hope you will love it too.  The recipe serves 4 but to be honest there never seems to be enough! So doubling this recipe is never a bad idea. Dahl is great served with naan / rice / + salad. You could use fresh turmeric if desired – but I use dried for convenience in this recipe.

Serves 4

1 onion thinly sliced

2 cloves of garlic minced

1 tbsp of coconut oil or sunflower

250g dry red lentils (rinsed)

1 tsp ground turmeric

1/2 tsp cumin powder

1 large tbsp of vegetable bouillon powder

800ml of fresh water

**You can top with fresh coriander (cilantro) / parsley / mint / +fresh chilli

In a large ish pan cook the onion, garlic and oil until browned (5-7 mins). Now in the same pan add all the other ingredients. Bring to the boil. Stirring consistently with a whisk. The whisk helps break down the lentils and makes the perfect consistency. Now it has boiled you can reduce to a simmering heat * . Keep whisking / stirring. It should take around 20 mins to cook. You can add more water if necessary but add a little at a time. Taste and add salt and pepper as required (I never feel the need to add salt personally).

*scoop off any lentil scum with a spoon and discard

Serve with salads or other indian dishes. A dollop of coconut yogurt is divine!

The hungover version 🙂

Shared with love. I hope you enjoy this nourishing dish as much as me and my family do x
