Yep you read the title right!! This recipe is all about the balls …. what ?? I never said I was a proper grown up – I have to get my sniggers where I can !
These balls will be one of the best things you pop in your mouth for a long while (I’m sorry innuendo tastic!). They are easy to make and once you’ve made them once, you should be a nut ball master….
I think I should get on with the recipe before I get into some trouble here..
Ingredients
1 onion diced finely
1 tbsp of coconut oil or sunflower oil
2 tsp of marmite in 1/4 pint hot water
220g mixed nuts (peanuts are great + cashews .. then smaller amounts of things like walnuts or brazil nuts – you could just buy some mixed nuts!)
2 tbsps of mixed seeds (I buy a pre mixed pack) sunflower seeds are good , poppy seeds , flaxseeds.
1 Slice of wholemeal bread (seeded bread is even better!)
1 tbsp of mixed herbs
Pinch of pepper
DIRECTIONS
I’m going to add in some rough timings – presuming that your are cooking a roast dinner (ignore if you’re not!).
I start the roast dinner off by peeling my potatoes and then putting them to boil. Now you can start your mini nut roasts!
Toast your bread evenly. In a small pan brown off the onions with the oil (5-7mins). In your food processor place ALL the ingredients (EXCEPT THE NUTS) –
now at this point you have a choice … do you want smooth nut balls (oh the lols) that don’t have much inner crunch (kids generally prefer these), or do you want a crunchier nut ball? If so place 2/3rds of the nuts into the processor and blend until mixed through. Then add the rest of the nuts and stir through with a spoon.
(If you wanted the smooth nut option just add all the ingredients and process)
With clean hands – grab a golf sized ball amount of the mixture (it should be a little gacky), and roll into a ball shape. Repeat until you have the amount of balls required. Generally this mixture makes 6 balls. I tend to make slightly smaller ones for the kids to whine at, and bigger ones for the adults. The choice is yours!
Place on a non stick tray. They will take about 30 mins to cook on 180C/350F/gas mark 4.
The preparation process should of taken roughly 10 mins- long enough for your potatoes to be soft enough to add to an oven dish, and put in the oven. I usually prepare the vegetables now. Once the potatoes have been in the oven for 20 mins, give them a shake. Now you can put the mini nut roasts in, and start cooking your veg. Which should all time nicely now.
