Hummus is life . I seriously start to panic when I don’t have any!! What could be better than hot pitta (in fact is there anything hotter than the inside of a pitta bread?) and hummus!
Here is my recipe for you ….yes YOU!
INGREDIENTS
2 x 400g cans of chickpeas (keep the liquid)
4 tsp tahini
6 tbsp of extra virgin olive oil (plus extra for drizzling)
2 crushed garlic cloves
1 tsp salt (I love pink salt)
3 tbsp of lemon juice (fresh lemon is preferable) use unwaxed**
Paprika (optional)
DIRECTIONS
Empty the chickpeas into a sieve and then rinse with water. Place in a food processor with the rest of the ingredients, and add six tablespoons of the chickpea water. When the mixture is fully mixed and smooth, taste a little before adding more lemon or salt if necessary. Pour into a serving dish. Top with a little extra olive oil. Very gently shake a little paprika on top. Then enjoy.
You can top with some whole chick peas for a more presented dish. Cumin also goes really well- add 1/2 a tsp if desired. Coriander and parsley work nicely too.
