Hello there! I hope you’re all well?! Today my baby girl was 2, wow that time has flown. She’s a feisty madam no idea where she gets it from 😳
I made her a kiwi lime pie. It was super tasty and easy.
For the base
30 dates stones removed and soaked in hot water for at least 20 minutes
2 cups of ground almonds
2 tbsps of coconut oil
For the topping
2 ripe avocados
4 tbsps of agave syrup / maple syrup / date syrup
Place the base ingredients into a food processor, and mix until well combined.
You will need a 20-25 cm cake tin / silicone mould (ideally a tin with removable bottom). Line with baking paper.
Now put all the mixture into your cake tin. I used my fingers to prod the mixture into place. Push well into the corners.
For the topping- remove the skin and stones from the avocados and place into your food processor. Now get one of the limes and grate the skin into the food processor jug, then peel the rest of the skin off and place the lime into the jug. Squeeze the juice out of the other lime and then keep the skin to grate over the finished pie. Add the syrup and 2 kiwi fruits (skins removed) blend until smooth.
Pour over the base then knock the base onto your work top to evenly spread the mixture.
Place in the freezer for an hour and a half to set. Top with sliced kiwi fruit and grated lime skin.
This needs to be eaten pretty quickly once removed from the freezer. Store any remaining pieces (I know, I know there won’t be any left!) in the freezer.
