Bitter chocolate truffles.
These are lovely and quick. Kids will love to make them too.
Organic ingredients can make a real taste difference.
Recipe
3/4 cup of coconut milk
1/2 cup of good quality cocoa powder
200g of good quality dark chocolate
1tbsp of icing sugar
1tbsp of fine brown sugar (I used coconut sugar which has a more caramel flavour)
Optional hazelnuts to stuff inside
Optional 1tbsp of coffee granules dissolved in same amount of boiling water
Optional dessicated coconut
Directions
Melt all the chocolate then stir in the coconut milk. Add slowly the cocoa powder, sugar, icing sugar and coffee if using. This should be a good arm workout mixing it up. Add more of cocoa or milk if needed to get the stiff texture.
Roll into little balls. I stuffed every other with a hazelnut and rolled in more cocoa powder and dessicated coconut. Place in the fridge for at least 1 hr ideally at least 4.
You can add a liquor in place of coffee if you prefer or leave out all together.
